Honey Almond Granola
This granola is super easy to make, and trust me it’s so much better than store-bought! Adding a drizzle of honey over the top of the granola immediately after it comes out of the oven makes it extra delicious. It’s crunchy and slightly sweet & a little salty at the same time. Another bonus is that your house will smell amazing after making it. I am not a huge fan of dried fruit in my granola, but add some if you want. A 1/4 cup of chopped dried apricots works great, as well as dried cherries, cranberries, or raisins. Enjoy!
Cucumber Feta Salsa
This cucumber feta salsa is a summer staple in our house. I like to keep a big bowl of it in the fridge, especially when we are at our cottage. The combination of the salty feta, the coolness of the cucumbers and the tang of the lemon juice just hits on a hot summer day!
Perfect Pesto Pasta Salad
This Pesto Pasta Salad is THE dish to bring to all your summer BBQ’s and get togethers. It comes together quickly and the fresh spinach and arugula lighten it up. I made this for a neighborhood Memorial Day get-together; it was a hit!
