This cucumber feta salsa is a summer staple in our house. I like to keep a big bowl of it in the fridge, especially when we are at our cottage. The combination of the salty feta, the coolness of the cucumbers and the tang of the lemon juice just hits on a hot summer day!
**Cucumber Feta Salsa**
1/4-1/2 cup of finely chopped red onion
2 tablespoons of fresh lemon juice
1/4 teaspoon freshly ground black pepper
2 cups chopped cucumber(seeds scraped out)
3/4 cup of crumbled feta cheese
1/2 tablespoon olive oil
1 tablespoon chopped fresh dill (optional)
Combine the onion, 1 tablespoon lemon juice, pepper, cucumber, feta, olive oil and dill (if using). Taste and add more lemon juice if needed. Sometimes I add a dash of salt.
Serve with pita chips or a rice cracker. I love Crunchmaster multi-seed rice cracker.
