This granola is super easy to make, and trust me it’s so much better than store-bought! Adding a drizzle of honey over the top of the granola immediately after it comes out of the oven makes it extra delicious. It’s crunchy and slightly sweet & a little salty at the same time. Another bonus is that your house will smell amazing after making it. I am not a huge fan of dried fruit in my granola, but add some if you want. A 1/4 cup of chopped dried apricots works great, as well as dried cherries, cranberries, or raisins. Enjoy!
**Honey Almond Granola**
Ingredients:
3 1/2 cups old fashioned oats
1/2 cup raw almonds, chopped
1 tablespoon flaxseed meal or hemp seed (optional)
1 tablespoon ground cinnamon
1/4 teaspoon salt
1/2 cup coconut oil
2 teaspoons vanilla extract
1/4 cup pure maple syrup or raw honey, or a mix of both (which is what I often do)
1/4 cup of dried fruit (optional)
1 tablespoon raw honey (for drizzle)
Directions:
Preheat oven to 350 degrees. In a large bowl combine oats, almonds, flaxseed meal, cinnamon and salt. Set aside. In a separate bowl combine melted coconut oil, vanilla and maple syrup/honey (and dried fruit if you are using). Stir to combine and then pour it over the oatmeal mixture in the bowl. Gently mix with a large spoon. Spread the oatmeal mixture on a large baking sheet so it’s one big thin layer on the baking sheet. Bake for 20-25 minutes, stirring once or twice while baking. The oatmeal will seem soft when it comes out of the oven, but don’t worry- it will crisp up as it cools. Immediately after taking the oatmeal out of the oven, drizzle 1 T. of honey over the top. Let it cool completely. Store in an airtight container for 7-10 days.
